Can someone please tell me the nutrients in rosemary? We consume a lot of it and I wonder if it's ok.?

Aromatic amines are carcinogenic and I wonder if the aroma in the rosemary herb has any aromatic amines. Can someone list the nutrients/chemicals in the herb? Thanx!

Can someone please tell me the nutrients in rosemary? We consume a lot of it and I wonder if it's ok.?
"Rosemary has a very old reputation for improving memory, and has been used as a symbol for remembrance (during weddings, war commemorations and funerals) in Europe, probably as a result of this reputation...A second study shows that carnosic acid, found in rosemary, shields the brain from free radicals, lowering the risk of strokes and neurodegenerative diseases like Alzheimer's and Lou Gehrig's...

Health Precautions: In some cases, rosemary can cause autoimmune diseases. Rosemary in culinary or therapeutic doses is generally safe; however, precaution is necessary for those displaying allergic reaction or prone to epileptic seizure. Rosemary essential oil is a powerful convulsant; if applied to the skin, it may cause seizures in otherwise healthy adults or children. Rosemary essential oil is potentially toxic if ingested. Large quantities of rosemary leaves can cause adverse reactions, such as coma, spasm, vomiting, and pulmonary edema (fluid in the lungs) that can be fatal. Avoid consuming large quantities of rosemary if pregnant or breastfeeding.

Rosemary may also be useful in the prevention and treatment of headlice."
Reply:Nil calories - but it's mainly the medicinal content of herbs thats so benificial -

I found this -

The wonderful smell of rosemary is often associated with good food and great times. But it could just as easily be associated with good health. Rosemary contains substances that are useful for stimulating the immune system, increasing circulation, and improving digestion. Rosemary also contains anti-inflammatory compounds that may make it useful for reducing the severity of asthma attacks. In addition, rosemary has been shown to increase the blood flow to the head and brain, improving concentration. So, the next time you enhance the flavor of some special dish with rosemary, congratulate yourself for a wise as well as delicious choice.
Reply:Unless you roast it or bake it till brown I wouldn't worry about carc's. The only time a carcinogen would come into play is consuming a burned or crispy item and that would apply to ANY herb not just Rosemary.

Eating it for 20 years. Still not dead.
Reply:Unless you eat ounces of this a day, the nutrition will be insignificant. Considering how strong it is in flavor, I doubt anybody can do that. An ounce of it is a huge bag, and it just takes a pinch to season a recipe.
Reply:good source of iron, calcium, and fiber. I do not believe any credible evidence it being carcinogenic has been confirmed, but its possible (although I'd say not probable).
