Recipe for red wine and rosemary jus?

Red Wine Marinade





INGREDIENTS:


2 cups red wine dry


1 bunch scallions,


sliced (optional)


2 cloves garlic, minced


1/2 cup olive oil


1/4 cup soy or teriyaki sauce


2 tablespoons dark brown sugar


1 teaspoon fresh ginger,


grated (optional)


1 tablespoon Worcestershire,


sauce





DIRECTIONS:


Combine all ingredients and


marinate steaks (or any type


beef) several hours.





After marinating steaks you


may boil the marinade for 10


minutes and use as a basting


sauce.





now recipe for rosemary jus





Ingredients needed:





* 2 tablespoons minced shallots


* 1 tablespoon minced garlic


* 3 tablespoons chopped fresh rosemary


* 1/2 teaspoon salt


* 4 turns freshly ground black pepper


* 1 1/2 cups Lamb or Veal Stock or


* Brown Chicken Stock








Combine the shallots, garlic, rosemary, salt, and pepper in a small saucepan, place over high heat, and cook for 30 seconds. Add the stock and bring to a boil. Reduce the heat and simmer for 6 minutes. Remove from the heat. Serve immediately or store, refrigerated, in an airtight container for up to 2 days. Reheat in a small saucepan over lowest heat.





Yield: about 1 cup
