When cooking with fresh rosemary do you use the stem or the leaves?

you should only use the leaves, grab the stem and stip it of the leaves, the stem is to tough and doesn't hold the flavor the leaves do.

Reply:Strip the leaves from the stem unless you are going to remove the rosemary before serving. Rosemary is very tough, so it is better to snip fresh leaves into smaller pieces or crumble dried leaves.

If you are grilling, though, take whole branches and set on top of the coals, the smoke is awesome and makes whatever you are grilling even more succulent.
Reply:When I make my famous rosemary chicken I use the leaves on top, cause everyone will see them, then I shove the stems up the chicken, and I remove them before serving.

Reply:Just the leaves if you're going to eat it, but you can use whole branches if it's just to infuse flavour, like in the cavity of a roast chicken, etc. Really good with baked potatoes, just add a few leaves before wrapping the potato in tinfoil!
Reply:Both. If you want to use the leaves only, slide the little twigs between your fingers to remove them from the stem. Or, just place the whole thing into whatever you are cooking and remove it or rearrange it as garnish when you serve.
