How do you measure dried and fresh rosemary for a recipe? Can they be used interchageably?

You can't use dry and fresh herbs interchangeably. A good rule of thumb is that you should use 1/3 less of the dried herb than you would of the fresh. So, if a recipe calls for 1 Tablespoon of fresh rosemary, you'd substitute 1 teaspoon of dry.





As for how to measure, I'd recommend a good set of stainless steel measuring spoons. I love the ones with rectangular bowls, because they fit into spice jars for easier measuring. You can see an example here:

man...if at all possible use fresh herbs!!!!





when it comes to dryed herbs, you have no idea how long they have been sitting in the can/bottle...whatever.





trust me, there is a huge taste difference in dryed and fresh...but, if you must use dryed herbs always put some in the palm of your hand and rub it just before you put it in anything. doing that releases the oils and flavors inside.
Reply:I think fresh is better, but I can't always have some as I don't have a garden... So I often use dry rosemary


about the quantity I put in a recipe, it's how I feel it. I mean, I put some rosemay, I taste, and then I decide if I put more or no.
Reply:The dried has a more intense flavor, use less.


Fresh is very good and you can use more of it in your recipe.
