I have paprika, oregano, basil and rosemary an. I want to make some Italian vegetarian food. Any suggestions ?

I am looking for Italian vegetarian recipes. Please help. With minimal additional ingredients I wan to make something simple, spicy and tasty. Also someone please suggest me recipe for simple pizza.

You can do some eggplant dishes.


The very simplest of pizzas is to buy already made pizza dough at the store and top it with some seasonings and some goat cheese or any other kind of cheese you like and drizzled with some olive oil - you can also top it with some already cooked eggplant slices - yum that would be good!
Reply:Ask an Italian vegetarian or you could see if there is a website for Vegetarian food. For the pizza side, make your own dough and put on it what you want within reason.
Reply:1/2 large sweet onion chopped


4 cloves garlic pressed or chopped


4 Roma tomatoes chopped


1 red bell pepper chopped


1 Cort mushrooms sliced( I love the baby portabella ones but any will doo)


1 yellow squash chopped


1 zucchini chopped


3 tbs olive oil


2 tsp italan seasoning( or oregano, parsly, salt, peper, garlic salt, red peper flakes


Optinoal, 1/4 cup red wine ( merlo or cab, some thing you would drink).


1 lb pasta.


put on water for pasta. chop all vegies put aside.add pasta when boiling. heat pan add olive oil add all vegies except tomatoes.add spices, cook untill vegies are almost soft, sturing frequently. add tomatoes cook 3 min. ( add wine bring to boil ) plate over pasta. YUM


you can add or sub whatever fresh veggies you like. spices too white wine, play around with this recipe. the sky is the limit. diffrent pastas will make this dish diverent too. have funn
Reply:One simple Mediterranean inspired dish I make is the following:





Sun dried tomato and mushroom pasta


1-2 cloves garlic


16 oz mushrooms (I like crimini or portabello)


~10 reconstituted and sliced sun dried tomatoes (keep water or wine for later use)


white wine (a Pino Grigio works well)


olive oil


basil (fresh)


oregano (fresh)


Asaigo or Pecorino Romano cheese


whole wheat pasta (cooked)





Heat a few Tablespoons Olive oil in saute pan (medium heat). Add minced garlic to the pan and cook until slight translucent. Add sliced mushrooms and let them cook down. When the mushrooms have lost their water and have finished cooking down, add wine and the retained sun dried tomato liquid to the pan (enough to just cover the bottom). At the same time add sun dried tomatoes. When the mixture is heat through toss with the cooked pasta. Add the fresh basil and oregano to the pasta and toss again. Add a little more olive oil if the pasta looks dry. Top with some grated cheese.





I tried to estimate amounts of the ingredients, but you can adjust the amount of any ingredient up or down based on your personal tastes. Unfortunately there isn't a lot of written true Italian recipes if my family is the rule. Most of my knowledge comes from watching my great-grandmother, grandmother, father, and mom cook family dishes. I was taught to make marinaras and pastas by look and taste rather than specific amounts. I find though the key to good Italian is simple ingredients and simple preparation (and of course lots of garlic).





For the pizza, all you need is a base dough and then there are no more rules. The classic pizza is the Margarita which just has tomoto, basil, and cheese.
